Artichoke Cakes

  • Cilantro - minced (1 ea)
  • Asiago Shredded Cheese (1 ea)
  • Egg (1 ea)
  • Panko (1 ea)
  • Artichoke Hearts (1 ea)

Steps

  1. Pulse artichoke hearts, egg, and cheese in food processor until combined.
  2. Mix in cilantro, and add enough panko to firm up the mixture.
  3. Form into 12 small discs (crab cake size) and coat in panko.
  4. Pan fry to a golden brown.
  5. Heat through in oven.
  6. Plate on red leaf lettuce.
