Beef Kabobs

Cubes of meat cooked with vegetables on a skewer.

Ingredients

  • Beef, Top Round - denuded, 2" cubes (3.75 lbs)
  • Mushroom, Button (20 ea)
  • Oil, 75/25 (10 oz)
  • Onion, Red Jumbo (1.25 lbs)
  • Pepper, Black - ground (20 ea)
  • Salt, Kosher (20 ea)
  • Squash, Baby Yellow (20 ea)
  • Tomatoes, Cherry (20 ea)

Steps

  1. Toss the ingredients in the oil, salt and pepper.
  2. Optional - Mark the beef cubes and pre-cut veggies on the grill.
  3. Roast everything and let cool.
  4. Assemble the skewers (meat, squash, tomato, onion, mushroom, meat).

Notes

The original recipe said it served 4.5 at 1 lb each? I put a yield of 20 because it calls for 20 of the items we put one of each on a stick... The meat measurement might be off, but basically 40 cut pieces are needed to supply 20 sticks.
