Bleu Cheese Dressing
Blue cheese dressing is a popular side sauce, salad dressing and dip in the United States.
Ingredients
- A-1 Sauce (1 btl)
- Black Pepper (1 c-cup)
- Bleu Cheese (12 lbs)
- Cottonseed Oil (2.5 gal)
- Dry Mustard Firmly Packed (1 c-cup)
- Garlic Powder (1 tbsp)
- Italian Seasoning (1 tbsp)
- Ketchup (___)
- Red Wine Vinegar (.5 gal)
- Salt (1 c-cup)
- Water (2 cups)
- Worcestershire Sauce (10 oz)
Steps
- Mix Salt, A-1, Garlic Powder, Italian Seasoning, Ground Black Pepper, Dry Mustard, and Worcestershire.
- Place 2 cups of water in a Roux container and fill to line with ketchup.
- Add to mixing bowl, and add crumbled bleu cheese.
- Start mixer on low speed with whip attachment for 4 minutes.
- Increase speed to medium and add cottonseed oil over 25 minutes (1/2 gal every 5 minutes).
- Add Red Wine Vinegar and mix for 5 minutes.
