Edamame Salad
Edamame are young soybeans harvested before they ripen or harden. Available shelled, in the pod, fresh, or frozen, they are a popular, plant-based food that may have various health benefits. Edamame beans are naturally gluten-free and low in calories. They contain no cholesterol and provide protein, iron, and calcium.
Ingredients
- Edamame Beans (1 lb)
- Mushrooms, Shiitake - sliced (1 lb)
- Oil, 75/25 (1 lb)
- Onion, Green - minced (1 lb)
- Pepper, Red Bell - diced (1 lb)
- Pepper, Yellow Bell - diced (1 lb)
- Sesame Seeds, Black (1 lb)
- Sesame Seeds, White (1 lb)
Steps
- Toss sliced mushrooms in oil, and sprinkle with sesame seeds.
- Bake at 350'f until mushrooms cooked and seeds toasted.
- Toss mushrooms with remaining ingredients, except the dressing (ship separately).
- Prior to serving/displaying, toss the dressing with 2 oz dressing to 1 lb salad.
- Adjust seasoning with salt and pepper as needed.
