Frozen Butter Biscuits
Ingredients
- Rosemary - chopped (1 tbsp)
- Baking Powder (2 tbsp)
- Salt and Pepper (1 ea)
- Salt, Kosher (2 tsp)
- Butter - frozen (1 cup)
- Milk (1.5 cups)
- Flour, All Purpose (4 cups)
Steps
- Whisk the flour, baking powder, salt, and rosemary.
- Shred the frozen butter directly into the dry ingredients.
- Toss gently with fingers to evenly distribute the butter.
- Add milk and stir with upside down wooden spoon.
- Fold the dough over a few times with your hands until all ingredients come together.
- Pat the dough out on a lightly floured cutting board.
- Cut with a small cutter - 2" (dip in flour to avoid sticking).
- Position on a baking sheet and sprinkle with course salt and pepper.
- Bake until they are golden brown (15 minutes at 400 degrees).
Notes
If necessary in step 5, add a bit more milk to gather up stray flour. This kneading will strengthen the dough a bit, but not enough to toughen up the biscuits. It will also help them form a crisp crust when they bake.
