Grilled Salmon

Grilled salmon is salmon that has been cooked over coals or a gas flame and is one of the oldest fish preparations known.

Ingredients

  • Oil, 75/25 (1 cup)
  • Pepper, White - ground (1 tbsp)
  • Salmon (17 lbs)
  • Salt, Kosher (8 oz)

Steps

  1. Trim, remove skin, and portion into 6 oz pieces.
  2. Rub with oil, salt, and pepper.
  3. Mark both sides on the grill.
  4. Place on a sheet pan and finish off in the oven. Cook until medium.
