Grilled Vegetables
Couscous is a type of pasta that's made from semolina wheat flour and water. The subtle nutty flavor of couscous makes it a versatile ingredient that can be combined with fruits, vegetables and meats to create an excellent main or side dish.
Ingredients
- Eggplant - 1/4" slice (4 lbs)
- Oil, 75/25 (1 cup)
- Onion, Red - 1/4" slice (5 lbs)
- Pepper, Red - seeded, cored and quartered (4 lbs)
- Pepper, Yellow - seeded, cored and quartered (3 lbs)
- Salt, Kosher (.01 lb)
- Zucchini Squash, Yellow - 1/4" slice (3 lbs)
- Zucchini, Green - 1/4" slice (3 lbs)
Steps
- Toss the vegetables in the oil and season with salt and pepper.
- Grill on both sides until fully cooked.
- Let cool.
