Manchengo Stuffed Onions

Simple flavors - onion and cheese - that combine perfectly for an Italian dish that complements practically all main courses.

Ingredients

  • Bread Crumbs, Panko - untoasted (18 oz)
  • Butter, Unsalted (1 lb)
  • Cheese, Asiago - grated (14 oz)
  • Cheese, Jack - shredded (1 lb)
  • Cheese, Manchego - shredded (7 oz)
  • Cream, Sour (1 cup)
  • Cumin - ground (4 tbsp)
  • Onions, Yellow Jumbo (16 ea)
  • Parsely - minced (.75 oz)
  • Pepper, White - ground (1 oz)
  • Salt, Kosher (1 oz)
  • Sauce, Shriracha (.75 oz)
  • Vinegar, Balsamic (4 tbsp)

Steps

  1. Place on a sheet tray in a 350'f oven for 1.25 hours.
  2. Scoop out all but 3 layers of the onion to make a bowl.
  3. Use a couple of large pieces to patch and seal the bottom of bowl, then chop the rest.
  4. Mix chopped onion with 1/2 parsley, cheeses, vinegar, sour cream, sriracha, seasonings.
  5. Stuff each onion with mixture.
  6. Melt butter and mix with bread crumbs. Cook until lightly browned.
  7. Add minced parsely.
  8. Cap each onion with the bread crumb mix.
  9. Bake at 400'f for 7-9 minutes.
