Red Quinoa Salad
Red quinoa is native to South America. It's actually a gluten free seed, but used in cooking like a whole grain. Red quinoa is delicious on its own and in pilafs, soups and salads; the beautiful color elevates even the simplest dish.
Ingredients
- Chicken - breast, 3/4" dice (8 oz)
- Corn - cut off the cob (8 oz)
- Parsley - stemmed and minced (8 oz)
- Quinoa, Red (8 oz)
- Vinegar, Balsamic White (8 oz)
Steps
- Put the quinoa in a hotel pan and cover with water by 3/4", steam until cooked, cool.
- Toss all ingredients.
